  • 1.) Curry Taro Chips

    
    

    Measurement Ingredient

    
    

    1 each......................Taro Root, peeled

    1/2 cup....................Grapeseed Oil

    1 Tbsp.....................Curry Powder

    2 Tsp.......................Salt

    1 Tsp.......................Paprika

    Pinch.......................Red Pepper Flakes

    
    

    Method of Preparation

    
    

    Pour grapeseed oil in sauce pan and place on medium-high heat.  Slice taro thinly using a mandoline.  Mix remaining ingredients.  Place taro slices into hot oil until light brown then remove chips and place on paper towels. Toss taro chips in curry mixture.

    2.) Gyoza in Green Tea Broth

    
    

    Measure  Ingredient

    
    

    5 each  Gyoza

    1/2 Tbsp  Vegetable Oil

    
    

    Method of Preparation

    
    

    Heat skillet on medium-high heat then add oil.  Place potstickers in skillet and brown both sides.  Remove, place in warm serving bowl and pour green tea broth on top.

    3.) Green Tea Broth

    
    

    Measure Ingredient

    
    

    1 1/2 cups  Green Tea, liquid

    2 Tsp  Seasoned Rice Vinegar

    1 Dash  Shoyu

    Few Drops   Sesame Oil

    To Taste  Salt

    
    

    Method of Preparation

    
    

    Combine all ingredients and bring to boil in small pot. 

    
    

    Garnish: Scallions sliced thinly on bias.

    4.) Langostines with Thai Corn Sauce

    
    

    Measure Ingredient

    
    

    5 each  Langostines

    8 ounces  Butter

    1/4 cup  Water

    To Taste  Salt

    
    

    Method of Preparation

    
    

    Melt butter in sauce put on medium heat then add water and salt to taste.  Simmer mixture, add langostines, drop heat to low and poach langostines until barely cooked throughout.

    5.) Thai Corn Broth

    
    

    Measure Ingredient

    
    

    2 cups  Seafood Stock

    1 cup  Corn Kernels, cooked

    1/4 cup  Coconut Milk

    2 each  Kaffir Leaves

    1 Tsp.  Lemongrass, minced

    1 Tsp.  Galangal Root, grated

    
    

    Method of Preparation

    
    

    Combine all ingredients in sauce pot.  Bring to boil and simmer for 8 minutes.  Remove kaffir leaves and puree mixture in blender then strain.  Reduce mixture to sauce consistency.

    
    

    Garnish:  Twist shaved pickled fennel into a nest and top with Thai basil, mung bean sprouts, cilantro and lime slice.  Drizzle a touch of chili oil on broth.
